Liza's Zuchini Bread Recipe

In honor of my good friend Liza, who went home to be with the Lord this past year who was 99 years old, almost 100, who was an inspiration to me and could about out work anyone a fraction of her age. From sewing, to cooking, crocheting, knitting, quilting, yardwork, playing her organ, and having fun with her little bird and kitty. We miss you, Liza, but know you're in a far better place with Jesus!


Liza's Zuchini Bread

3 c all purpose flour
2tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 1/2 tsp cinnamon
3/4 c nuts (opt.)
1 8 oz can crushed pineapple
3 eggs
1 c oil
1 tsp vanilla
 2 c corsley shreaded zuchini
2 c sugar

(I substituted some of the oil (used for applesauce and some of the egg with ground flax seed.)
Combine dry ingred. set aside.
Beat eggs, sugar, oil, vanilla
Stir zuchini and pineapple add dry ingred. until moist. Bake 350 degrees 1 hr. Cool 10 min. Yield 2 loaf pans.(Greased and floured)

  2. Liza sounds like a truly amazing woman - and that you were blessed in knowing her. Thanks for sharing this recipe....Sounds a little different than the typical ones with the pineapple.
